Pizza recipe addenda
Other basic toppings include pizza bianca (no tomato, just mozzarella and your preferred herb) and two vegan options:
Pizza marinara: tomato base plus frsh basel leaves and three sliced cloves of garlic, no cheese
Thin focaccia with potatoes and rosemary: no cheese, no tomatoes: you slice a few potatoes very thinly, place them evenly on the (thin) base, sprinkle with oil, a pinch of salt and a tablespoon or so of rosemary. Keep an eye on this one because it ought to cook in a matter of minutes.
For a more standard focaccia, spread the dough so it's an inch or so thick, make depressions on the surface with your fingertips and a few holes with a fork, then grease the top with a couple of tablespoons of olive oil. Sprinkle some salt (rock salt would be dandy) and oregano to taste. Make sure not to overcook it, a very light shade of brown does it.
